Chef Oscar Featured in The Tequila Report: A Guide to Tequila and Food Pairing

Chef Oscar Moreno, executive chef of MeXo Tequila & Mezcal Bar in Grand Rapids, was recently featured in The Tequila Report's guide to pairing tequila with food, joining two other respected chefs in the industry. The piece covers Chef Oscar's approach to matching blanco, reposado, añejo, and extra añejo tequilas with different dishes — from fresh seafood and ceviche with blanco, to roasted poultry and grilled vegetables with reposado, to braised meats and dark moles with añejo, up to slow-cooked dishes and chocolate desserts with extra añejo. Chef Oscar also shared his take on how a tequila's growing region shapes what it pairs best with. Highlands tequilas tend to lean bright and citrus-forward, making them ideal alongside seafood and lighter fare, while Valley tequilas bring more earth and spice, suited to roasted meats and dishes cooked over fire. To bring the tequila and food pairing guide to life, Chef Oscar designed a five-course tasting menu pairing each tequila style with a dish built specifically around it, from a grilled oyster starter through a smoked cacao dessert.
